a tad stressed.

so i feel a tad stressed today.

this morning i found out i had a paper due on monday - i totally forgot about. so i spent the morning writing the paper and now i have to just write the conclusion. i also need to clean up another paper that is due on monday as well.

oh my lanta!

i really just want to cry.

i have all these things running in my head as well as specific items i need done for work this week.

oh lanta ... i do want to cry.

but the bright side is that my parents are here. my dad woke up @ 6am (the time we wake up during the weekdays) - which is really 5am his time ... and was out the door with jc after breakfast to help work on the new house. it really is such a blessing to have my parents here b/c my dad is mr.handyman - so he's helping fix up the new home as well as some other stuff AND my mom is cooking which eases up my time to do work and homework.

oh, i wish i had time to spend with them, but i am truly busy. it is suppose to be my "reading break" this week - which means no school, but i honestly am so swamped and feeling overwhelmed. i had a paper due on wednesday that i had to submit on-line and 2 papers due on monday, plus midterms coming up ... oh my.

i was feeling so overwhelmed earlier that i tried to take a nap, but my head is just spinning w/ all the work i need to do - so i got up to continue working.

on a side note: i need to lay off the coffee, but it really comes in handy on days like today.

exciting.

earlier today i got a fun break from homework. i went to the new house to help my husband remove wallpaper. yes, i know it's a tedious and mundane job, but it's fun when you're doing it with your spouse.

... as i was helping remove the wallpaper from our bedroom, i was imagining what it will be like months from now when we're in our new home. maybe i'll be laying down in our new bed thinking back at that moment remembering what it was like. i know removing the wallpaper isn't the funniest thing - but in my mind, you can make it fun ... especially when you're with your husband.

oh man, i'm so excited to move!

i feel ill.

this afternoon we went out for lunch ... and a few hours later when i got home, i just wanted to cry.

it's funny though, b/c whenever i go to this restaurant, i try to eat very light b/c i've been noticing for the past year or so i've been getting ill after eating there. however, i continue to try to eat b/c sometimes i wonder if it's all in my mind. but nights like tonight remind me ... it's definately NOT in my mind.

oh well.

is it worth it? ummn ... sometimes YES ;) ... sometimes, uh, yes :) just kidding.

on another note, did i ever mention i'm re-addicted to the store michael's? yep - i'm loving it! especially the clearance bin for $1.5o!

i found this post from 2005 ... and it's funny b/c the pictures on the slide above is from our "date day". so here's the post that matches some of the pictures in the above slide.

A Date Day
A couple days ago, the husband and i had another "date day". We went to Lake Louise, Emerald Lake (in BC) and Banff.

We spent most of our day at Lake Louise - we decided to walk across the lake - it took us about an hour to walk across and back (including the time taking pictures). We thought - hey why not? we've never done that before, and now we can say we walked across Lake Louise! After our walk, we had lunch at the lounge looking over the frozen lake ... spent our time talking, laughing and of course eating!

We then decided to drive into BC to Emerald Lake ... JC was joking that 9 more hours of driving and we would be in Surrey ;) This was the first time we both had been to Emerald Lake in the winter ... I must say, it's much more beautiful in the summer where the lake really does hold the emerald color.

And then in the evening we went to Banff where we walked around and had our dinner.

It was the first time that we had a "Date Day" like that out of town where we were out ALL day long. I think this was the first time we had been out all day since before we were married. It was loads of fun, and I hope we can do that again soon.

I love these "date days" ... and the beauty of it is that it doesn't end at the front door step (or in our case at the airport) ... I love knowing that at the end of the day, I have my husband by my side ... thank you God for no more airport moments!!

i need a break.

what a day.

driving to school was a little frightening w/ all the snow. i slipped 2x's, but thank God i was driving slow and started to break way a head of time - otherwise i would have slid onto the oncoming traffic.

i got to school late - but that's okay since more than 1/2 the class wasn't there.

but i don't know what it is ... i think we all just need a break as the majority of us were either getting sick or just plain tired. the only way i got through school today was b/c of my friend named "tim" ... as in "tim hortons" ;)

anyways, now that i'm home - all i want to do is lay down ... but just 1/2 an hour more then i can rest.

thoughts in my head.

some random thoughts:

1. so many sites! some of my american cousins are into myspace ... my cdn friends (& some relatives) are into friendster ... both are into blogging ... oh my lanta ... so many sites to keep up with! ;)

2. i love email b/c i can communicate within seconds ... but yet, i still love receiving mail (not bills) in my mail box ... *sigh* i still love the old school mail

3. talking to my childhood friends on the phone is always refreshing ... esp when we still giggle over the same old jokes

4. i don't want to go to school tomorrow

5. we're still awaiting for isaiah's little brother/sister to make his/her appearance

6. exercising is good ... but eating is better

7. i think i'll always be over protective with my little cousins ... in my mind, they'll always be toddlers ... can someone please tell my youngest girl cousin that there's no such thing as dating until she's 29 1/2 !!!

8. catch a fire is a good movie

9. everyday is valentines day

10. i'm so thankful to my Lord God for my husband

Getting My Butt in Gear ... again.

So ... it's that time again ... where I "try" to be healthy and exercise. Yesterday I renewed my student card at the gym ... and used it for the first time! Yes, I know, I'm a geek - I activated it during my first semester @ school last year ... but i never used it.

I asked to "tag along" with my classmate as I've been noticing she 's been going to the gym before or after classes. She gave me a tour ... and I decided to use the area that is "less traffic" ... okay, meaning "less hard-core" and "less intimidating". Maybe one day, I'll move to the "high traffic" area ... yeah right! Anyways, I had an excellent work out! I am actually pretty amazed that my cardio lasted as long as it did ... and my weight training wasn't too bad as well.

Hopefully, I'll continue to keep this exercise routine up ... I've got to get in shape for our trip to Rome in the spring and Janice's wedding in the summer!

My Week Wrap-Up.

So here's a quick low down of my week:

Monday:
- Went to school
- Celebrated Alona and Ninang Luz's birthday ... kemy style .. meaning, i ate in their honor :)

Tuesday:
- goodness, this is hard, I barely remember what i did this morning
- had a training session for work
- ate their free food

Wednesday:
- went to school
- had our young marrieds group in the evening

Thursday:
- it snowed!
- my husband used the pilot, so i spent the day working, cleaning, and doing homework @ home

Friday:
- went to school - was 1/2 an hour late due to the snow
- just got home 20 mins ago after doing some work

oh boy, am i tired or what !?!?

also, i am anxiously awaiting the arrival of my nephew/niece ... mostly everyone thinks kuya and darleen are having a baby girl ... me included. so any day now! but maybe he/she will make an appearance on lauryn's birthday ... kinda like how tyson was born on isaiah's birthday. now, wouldn't that be sweet?!?!

oh lanta, i'm tired. off to bed i go.

Hot Chocolate Cake


8 tablespoons (1 stick) unsalted butter, plus extra for coating
3 tablespoons all-purpose flour, plus extra for dusting
1/2 cup sugar, plus extra for dusting
10 ounces semisweet chocolate, coarsely chopped
4 large eggs
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup mini marshmallows
2 tablespoons unsweetened cocoa powder

Preheat oven to 375° F. Generously butter, flour, and sugar eight 6-ounce coffee cups or mugs made of ovenproof stoneware (see tip below). Wipe the rims clean.

Place the 8 tablespoons of butter and the chocolate in a medium heatproof bowl over a pan of simmering water and melt, stirring once or twice until smooth. Remove from heat and let cool 5 minutes.

Using a handheld mixer, beat the eggs, yolk, vanilla, salt, and 1/2 cup sugar at the highest speed until the volume doubles and the mixture becomes foamy, about 5 minutes. Stir the 3 tablespoons of flour into the chocolate, then gradually add it to the egg mixture, beating on low until it's fully incorporated. Ladle the batter into each cup until it's about 1/2 inch from the rim.

Bake until the cakes puff and begin to crack but the centers are still a bit runny, 13 to 17 minutes. Remove from oven. Sprinkle with marshmallows, then return to oven for 2 to 4 minutes, until the marshmallow tops begin to crisp. Remove from oven; let cool about 5 minutes. Sift the cocoa on top.

Tip: You can bake these individual cakes in coffee mugs or teacups, or use eight 6-ounce ramekins. (To determine if your mugs are ovenproof, refer to the packaging or check with the manufacturer.) Alternatively, a single cake can be made in a 10-inch springform pan or pie plate with enough regular-size marshmallows to cover. To do this, increase the initial baking time to 22 to 25 minutes or, if you prefer a more gooey center, to 17 to 20 minutes.


Yield: Makes 8 servings
